- ciabatta bread (8-10 inches), sliced horizontally
- 4 oz. tuna of your choice, drained from its oil or water
- 2 table spoon mayonnaise
- 4 sun dried tomatoes, thinly sliced
- 4-5 black olives, deseeded and halved
- 6-8 sliced rings of pickled jalapeno peppers
- 1-2 anchovy fillets, finely chopped
- half a red onion, sliced thinly
- slice of young cheddar cheese
- salt and pepper
- little olive oil for cooking
Mix the tuna and mayonnaise, spread over half of the bread. Sprinkle the other ingredients. Put the other half of the bread on top, rub a non stick pan with olive oil and place the sandwich over a medium heat. Gently press the top of the sandwich while cooking. When one side is golden brown, turn it over and cook the other side until it is golden coloured.
Preferably serve it with a crispy green salad, iceberg and romano mix is ideal.
